Job Description & Responsibilities:

Our client is one of the industry leaders in the Southern Africa safari market with a significant and growing presence in Botswana.  In addition to developing new properties our client is also undertaking an exciting and committed rejuvenation program, upgrading a number of existing properties in their quest for luxury and exceeding customer expectations.

This property is currently in the final stages of a refurbishment and design program and will creatively combine new and contemporary features with the traditional. 

On behalf of our client HIH is currently looking for a Sous Chef.

Reporting to the Executive Chef , your role and responsibilities are highlighted below;

  • Responsible for the management of the kitchen and associated operations in the absence of the Executive Chef
  • Assist Executive Chef in preparing dishes to the highest standards of food quality and presentation
  • Working at a boutique facility you will be expected to develop a knowledge of guest preferences and prepare dishes accordingly
  • Use your creativity and confidence to prepare off-menu dishes from time to time
  • Assist F&B during functions and gala events
  • To work with Executive Chef to manage food inventory and consumables, ensuring timely orders are made
  • Ensuring that all kitchen equipment is in good and safe working order and that any defects are corrected
  • Demonstrate working knowledge and ability to use emergency and fire-fighting equipment and that it is in good working order
  • Be prepared to work challenging hours at relatively short notice
Candidate Requirements
  • 3-4 Years culinary experience, 2 of which should be at a 4*/5* hotel. Preference will be given to candidates with Safari Lodge experience
  • Display confident can-do attitude at all times
  • Possess an uncompromising attitude to food handling hygiene, which you also expect from your colleagues
  • Maintain tidy, professional appearance in line with a property of this standard
  • Display a passion and pride in what you do with the career development aspirations
  • Up to date vaccinations
  • Valid first aid certificate from accredited facility/body
  • Calm, measured, professional demeanor and personal appearance
  • Ability to work under pressure whilst maintaining focus on priorities
  • Passionate about training and developing others in your team
